Their 19° double-bevel edges are extremely sharp through the traditional Japanese honbazuke sharpening. Made from Zwilling special formula high-carbon stainless steel hardened by the exclusive Friodur process, the blades are extremely durable and the edges stay sharp for a long time. You’ll love the perfect balance of each knife through the full-tang blade and handle. The half-boster leaves the heel open to allow the blade to sharpened from end to end. The 3-rivet POM handle provides a secure grip, even when the hand is moist. The steel is resistant to staining and easy to clean. The knives also are dishwasher safe.
